When it comes to Cinco de Mayo, save your money and skip a full-fledged party. Just whip up some tasty, homemade margaritas and guacamole and it’s a fiesta, friends. 💃🏻 Lucky for you, I’m sharing my Uncle Kirk’s to-die-for margarita recipe!
Margaritas, Please
My Uncle Kirk is a cocktail genius and king of creating a meal I will actually eat with a bunch of stuff from the fridge that needs to be used up. He’s impressive. One of the best drinks he makes is mix-free margaritas full of fresh lime pulp (and he brings them to us while we sit in the sun at the lake, so life is good).
The basic recipe is one that bartender Kirk says originally came from family friend John Salzsiedler. The two of them call it Boji Margs:
1 shot good Tequila
1 shot Triple Sec
½ Lime, squeezed and pulp scraped (sometimes he uses a full lime)
Shake with ice and pour. Enjoy immediately with a salted or sugared rim!
It’s a super basic recipe, but it’s phenomenal. If you’re used to frozen margaritas or mixes, this will taste strong at first but you’ll get used to the freshness and yummy tequila.
Guacamole Is My Fave, Amigos!
There’s no real recipe for the guacamole I make. The key is perfectly ripe avocados, which are always a gamble. I remember my aunt teaching me how to squeeze them gently and to carefully twist out the remaining stem to see whether the spot underneath is bright green (not ready) or turning more of a brown shade. I’m 25 and still mastering that strategy. 🤷🏻♀️
When I’m making guac, I half the avocados, pull out the pit, throw them in a bowl, and use my sharp knife to “slice” the avocados in the bowl. It’s not a science; it’s just me chopping up and stirring the produce until it starts to resemble guacamole. Next, I squirt a little lime juice in and sprinkle on a decent amount of garlic salt. Ryan and I love garlic, but I still try to sprinkle less than I think I need to start. Later, before I serve it, I add extra if it needs it.
If I’m working with less-than-perfectly-ripe avocados, I add in a bit of olive oil to smooth out the texture. If you do try this method, make sure you use a high quality EVOO to avoid altering the flavor of the guac too much.
